Domaine Girin
Written by Antonio MENDES DA PAULASur la période presque hivernale, à l'approche de la date du lancement du Beaujolais nouveau, nous sommes allés à la rencontre du Domaine Girin en Beaujolais dans les terres des pierres dorées. Le rendez-vous a été pris sans aucune difficulté. Le samedi 12 novembre 2016, nous sommes reçus par les frères Henri & Bernard Girin au caveau de dégustation.

Nous sommes accueillis à l'heure de notre rendez-vous. En toute simplicité, nous sommes conduits au caveau de dégustation. L'échange se fait naturellement à l'écoute de la problématique des vignerons du Beaujolais. Comment faire reconnaître la valeur du travail fait sur le domaine dans le travail des vignes et en cuverie pour valoriser le prix de la bouteille pour rétribuer correctement le vigneron ?
Dans le passé ce domaine était une exploitation agricole avec quelques vignes. Au fil des générations, la culture de la vigne s'est imposée sur ce terroir. Dans les années 60-70, les négociants voulaient de plus en plus de vin. Les vignerons du Beaujolais devaient faire "pisser la vigne". Il n'était pas rare de mettre des engrais aux pieds des vignes pour augmenter le nombre des hectolitres produits. Chaque année, le négociant téléphonait et il achetait la production sans même goûter le vin !!!
Depuis + 15 ans, le Domaine Girin s'est orienté vers la viticulture raisonnée. Le nombre de traitements a fortement baissé. Aujourd'hui, on est dans une fourchette en fonction de la climatologie de l'année entre 5 à 8 traitements. Par exemple, les vignes des Coteaux du Razet produisent environ 45 hectolitres à l'hectare. Ce niveau garantie une production de qualité.

Le Domaine Girin existe depuis plusieurs générations, aujourd'hui, il est composé d'environ 35 hectares centrés sur les terroirs environnants avec des compositions du sol très différentes. La 5eme génération avec Audrey &Thibaut est appelée à continuer ce travail mais aussi à développer la vente à la clientèle particulière pour assurer une pérennité au domaine.


Le vigneron nous propose de commencer la dégustation par son Beaujolais blanc "tentation" 2015. Il est renommé dans la région. après on enchaîne avec le Beaujolais rouge "Séduction" 2015. On est séduit par ses arômes de fruits rouges et par la matière en bouche. On ressent un potentiel de garde à 5,90 €, une excellente affaire à mettre en cave pour quelques années.

Le vigneron nous verse dans notre verre le Beaujolais rouge "Coteaux du Razet" 2015. On ressent au nez une certaine complexité à base de fruits rouges. Il se dégage l'impression d'un grand vin. Au niveau gustatif sur le palais, cette impression est confirmée. On est en présence du devenir d'une grande bouteille ..... de Bourgogne à 6,80 € !!!
Le vigneron nous propose une cuvée élaborée et élevée en fut de chêne de 3 ans. La cuvée " l'Ancestrale" 2014. Cette cuvée est à découvrir à 9,50 €.
Une petite confidence, le millésime 2016 est aussi très bien.
Le samedi 30 novembre 2019, nous sommes accueillis pour un nouveau rendez-vous à ce domaine. On apprend que l'un des Frères est décédé depuis l'été 2018. Aujourd'hui, le domaine de 35 hectares repose sur le père et l'engagement de la nouvelle génération avec Audrey & Thibaut.
Le domaine vient de recevoir une nouvelle certification pour sa pratique viticole en culture raisonnée. La conversion du domaine est engagée depuis quelques décennies pour produire un vin de qualité en préservant l'environnement.
Les conditions climatiques du millésime 2019 ont été compliquées. La gelée, la grêle vers la fin du mois d'août, le stress hydrique de l'été ... ont abouti à réaliser une petite récolte. Cependant, les premières dégustations montrent un beau potentiel à venir.
Après un échange très instructif sur l'élévation des différentes cuvées à partir des différents terroirs, on commence la dégustation par les deux vins blancs du Domaine. La cuvée de Beaujolais blanc "Tentation" est à réserver sur les fruits de mer, l’huître ... son prix 7,30 €, la cuvée "L'Authentique" est un vin blanc plus complexe. Au nez on sent une richesse aromatique qui se confirme à la dégustation. Un très bon vin blanc pour des plats de poisson .. son prix 10,40 €.
Au niveau des vins rouges, nous avons commencé notre dégustation avec le Beaujolais "Nouveau" à 6,10 €. On est loin des cuvées distribuées en grande surface. Un vin plaisir à apprécier sur de la cochonnaille.

Après cette mise en bouche, on commence la dégustation par la cuvée "Séduction" 2018. Au nez, on sent un beau potentiel qui est confirmé en bouche. Il y a une certaine matière, de l'équilibre entre les tanins, l'acidité et les arômes .... son prix 6,80 €. La cuvée "Coteaux du Razet" est élaborée avec les vignes les plus anciennes du domaine (+ 60 ans). Le rendement obtenu est faible environ 20 hectolitres/hectare, mais on obtient une belle concentration. Au niveau de la dégustation, nous sommes en présence d'un grand vin "bourguignon". Au nez, il se dégage une richesse aromatique, sa couleur grenat est bien affirmée, au niveau du palais, on devine le futur d'une bouteille à "oublier" une petite décennie. Son prix 7,30 €.

La cuvée "L'Ancestrale" est une microcuvée qui exprime l'un des meilleurs terroirs du Domaine. Une réalisation à suivre. Son prix 9,60 €.
Notre nouveau rendez-vous a eu lieu le mardi 13 décembre 2022 sous la neige au domaine. Nous sommes accueillis par Audrey. Après avoir pris connaissance des évolutions des millésimes 2021 & 2022, nous débutons notre mise en bouche par la cuvée en vin blanc "L'Authentique" du millésime 2021. A la dégustation en bouche, ce vin est dans la lignée du millésime. Les nombreuses pluies n'ont pas favorisé la richesse aromatique habituelle. Cependant, cette cuvée est un choix assez judicieux pour faire découvrir un vin blanc élaboré à boire dans les 3 ans. Son prix: 11,20 €
Au niveau des vins rouges, la dégustation s'est réalisée avec des vins assez froids; Quelques degrés de plus auraient pu mieux appréhender la complexité aromatique des cuvées les plus élaborées du domaine.
On commence notre dégustation avec la cuvée du Beaujolais "Nouveau" 2022 à 6,70 €. Un vin parfait sur la cochonnaille à partager avec quelques amis. Lors de notre venue, il restait seulement 2 cartons. Il y a une forte demande des restaurateurs et des cavistes lyonnais pour ce breuvage.
La cuvée "Séduction" 2021 à 7,80 € est un vin typique du Beaujolais et du millésime. Un vin plaisir à déguster entre amis. La cuvée "Coteaux du Razet vieilles vignes" 2021 à 8,30 € est l'expression du terroir. On ressent au palais de la matière et des arômes, un vin à apprécier d'ici 2 à 3 ans.
La dégustation de la cuvée "L'Ancestrale" 2019 à 10,50 € est toujours un moment à part dans cette dégustation. Au fil du temps, les essais en cuverie avec les fûts légèrement boisés apportent un style unique à cette cuvée. Cette cuvée sort des caractéristiques beaujolaises établies. Au niveau de la Bourgogne, la filiation n'était pas établie. Le millésime 2019 apporte à cette cuvée des meilleurs terroirs du domaine une réelle expression gustative qui devrait se révéler dans une décennie.

Domaine Château de Vaux
Written by Antonio MENDES DA PAULALes monts du Beaujolais sont plantés de vignes avec les principaux cépages le Gamay pour les vins rouges et le Chardonnay pour le vin blanc. Le Beaujolais est une partie intégrante de la Bourgogne. Au Sud du Beaujolais vers Villefranche sur Saône, nous sommes sur les appellations "Beaujolais" et "Beaujolais villages", vers Beaujeu et Macon, nous sommes sur les 1er crus du Beaujolais (Brouilly, Moulin à Vent, Régnié, Morgon, Juliénas, Chénas, Fleurie, Saint Amour et le Chiroubles)
Au moment de l'Automne, les vignes prennent les couleurs automnales, le spectacle est magnifique sous les rayons du soleil.


Le village de Clochemerle en Beaujolais est devenu célèbre grâce à l'écrivain Gabriel Chevallier avec la publication de son roman "Clochemerle" en 1934.
On remarque sur la façade de la mairie, les couleurs du drapeau français sur les volets peints. Sur la place du village, il y a un pressoir assez impressionnant.

Actuellement, il y a un renouveau par la mobilisation de certains vignerons pour faire progresser la qualité gustative des beaujolais villages. Un important travail est réalisé sur les vignes en coteaux et il y a une réflexion sur la pratique de la viticulture raisonnée. On commence à réaliser des vins de caractère qui valorisent chaque parcelle en fonction de son terroir.
Notre venue au domaine s'inscrit dans la découverte du travail du vigneron Yannick De Vermont sur le futur millésime d'anthologie de l'année 2015 en Beaujolais.
Le domaine du Château de Vaux se situe juste en dessous de la place du village. Après le portail, l'entrée du domaine est situé à droite.

Nous sommes à l'heure à notre rendez-vous et nous sommes accueillis par Yannick De Vermont et son père en cave. L'accueil est chaleureux en toute simplicité. Ce domaine familial se compose d'environ 12 hectares situés principalement à l'entrée du village. La difficulté du travail dans ces vignes est la situation en coteau. Les terrasses ne favorisent pas le travail mécanisé et les intempéries peuvent générer des pluies importantes qui risquent d’entrainer la terre en bas du coteau. En conséquence, les jours d'orages, il faut être prêt à intervenir rapidement pour favoriser l'écoulement de l'eau de pluie pour éviter des gros dégâts dans les vignes.
Nous découvrons les espaces aménagés pour recevoir les visiteurs, puis on se rend vers l'espace de dégustation.



L'espace de dégustation est bien aménagé. On visualise les différents vins proposés à la vente par ce domaine.


Le vigneron propose de commencer la dégustation par un Beaujolais village blanc de Chardonnay, le cépage des blancs de la Bourgogne. Après, on nous propose de goûter un rosé. Le père précise que le rosé était déjà produit à son époque. Aujourd'hui, ce rosé séduit de plus en plus au moment de l'apéritif en kir mais aussi au moment d'un repas.
Yannick De Varmont et son père répondent à toutes nos questions à la fois technique et gustative. L'ambiance est très détendue et on sent la volonté de ce domaine de produire des vins de grande qualité. Il y a des initiatives et des projets pour encore progresser à la vigne mais aussi pour communiquer sur l'appellation du Beaujolais Villages.


En mai 2017, les vignes ont été épargnées par la grêle dans ces terroirs du Beaujolais. On remarque les paysages vallonnés avec les villages en pierre dorée.


La nouvelle dégustation du 27 mai 2017 a permis d'apprécier en bouche le millésime 2016 du domaine. Ce millésime est une belle réussite. Les cuvées " Les Verseaux" et "le Clos de Valentin" sont des cuvées avec de belles promesses de plaisirs gustatifs à venir.
La nouveauté du mois de mai a été le lancement du site de la vente en ligne .
Le mercredi 9 mai 2018, nous sommes reçus pour une nouvelle dégustation par le père de Yannick dans le nouveau caveau pour découvrir les millésimes 2016 & 2017. L'ambiance détendue a permis des échanges très intéressants sur l'avenir de la viticulture en Beaujolais. Les vins du millésime 2016 sont toujours aussi gourmands et ronds en bouche, on est sur une explosion en bouche immédiate. Le millésime 2017 est plus austère dans un premier temps, on ressent une certaine complexité et de la matière en bouche.
Nous "attaquons" les vins rouges et nous sommes séduits par la cuvée "La réserve de Jacques". Le millésime 2017 procure au palais une sensation d'épices à 9 €, le millésime 2018 est actuellement "fermé" mais on sent un potentiel de garde sur des arômes de fruits noirs d'un grand vin de Bourgogne. On vous conseille aussi les cuvées " Les Verseaux" à 6,50 € et " Le Clos Valentin" à 7,20 € en millésime 2018.

Les Orgues d'Ille sur Tet
Written by Super UserOn contemple l'érosion du temps sur la nature. Ce site remarquable illustre le travail de + 5 millions d'années sur la roche.
Cette visite se fait en complément de la découvert de Villefranche de Conflent. Attention, la signalétique à l'Ille sur Têt n'est pas évidente. On traverse la rivière la Têt et on s'engage sur une petite route. Aujourd'hui, il y a un site d'accueil avec un parking et une billetterie. La durée moyenne de la visite 1h30.
On emprunte un petit chemin de terre où il y a un petit balisage et un lieu où il est exposé des sculptures animaliers en ferraille.





On continue notre chemin et on arrive devant le poste de contrôle des billets d'entrée. Encore quelques efforts et on arrive au pied des cheminées de fée.


Les cheminées de fée sont créées à l'origine par l’écoulement de l'eau sur une roche friable qui se décompose au cours des millions d'années. Lorsque l'eau s'est retirée, l'érosion naturelle a continué par l'effet du vent et de la pluie. Au sommet de chaque cheminée, il y a une roche très dure qui forme le chapeau. Ainsi, on a des colonnes qui peuvent mesurer plusieurs dizaines de mètres en hauteur.
Lorsqu'on débouche sur le site, on voit ce panorama exceptionnel mais on est un peu perdu. On décide de partir à gauche et prendre un petit chemin étroit et glissant. La roche friable forme au sol des petites billes sablo-caillouteuses.

Il y a des passages étroits et lorsqu'il y a des personnes, il faut attendre son tour pour passer. On voit des personnes en poussette s'engager dans l'aventure !!!


Nous sommes au pied des cheminées de fée, on est impressionné par le lent travail de la nature sur la roche. Le site est très lumineux, il est conseillé de porter des lunettes de soleil.

Il y a une certaine végétation qui s'est installée sur les sédiments de la roche friable.


Le parcours est balisé, il est interdit d'essayer d'escalader les colonnes.

On arrive dans un cul-de-sac, il faut faire demi-tour. On revient sur la place principale du site.


On se dirige vers le fond des orgues, il y a une petite montée, on arrive à des grandes places. On suit les sentiers tracés pour découvrir le site naturel.



En fonction de la position dans le site, on découvre des paysages très différents. Il y a des colonnes très travaillées par l'érosion du temps. On comprend que ce lieu est éphémère.




Il y a des motifs très symétriques sur des flancs de colonnes.

On est impressionné au pied de la colonne lorsqu'on pense au poids total de l'édifice par rapport à sa finesse en élévation.

Sur la partie supérieur où il y a des arbres et de la végétation, on remarque au niveau des couches sédimentaires, une composition différente en surface.



On se dirige vers le chemin de l'entrée pour sortir du site. On se retourne une dernière fois pour profiter de la beauté du lieu.

En 1090, le village est fondé par Guillaume Raymond de Cerdagne. Après son rattachement à la France en 1659 par le traité des Pyrénées, le roi mandate le marquis de Vauban pour fortifier la ville. La vallée de la Têt a obtenu le label Pays d'Art et d'histoire. Vous ne regretterez pas de parcourir cette vallée qui s'enfonce dans les Pyrénées

Il est prudent d'arriver tôt sur le site par la route nationale 116. Il y a peu de place pour stationner son véhicule. Le parking est payant.
Nous sommes en altitude au bord de la rivière Têt. On admire le paysage montagneux mais en plein été il faut se protéger du soleil.

Au loin, on aperçoit le Fort Libéria qui est relié à la cité par un escalier souterrain d'environ 700 marches !!!

La circulation dans cette cité fortifiée se fait par deux rues parallèles, la rue Saint Jacques et la rue Saint Jean.

On remarque ici et là des vestiges médiévaux sur le bâti des maisons mais aussi par le rappel des enseignes en fer forgé accrochées au mur.



Vers 11h, les rues commencent à s'animer avec l'arrivée des touristes. Les échoppes ouvrent vers 10h. On aperçoit la tour beffroi de l'Hôtel de ville.


L'intérieur de l'église Saint Jacques est en cours de rénovation. La partie la plus ancienne est datée du XIIe siècle.


La place de l'église est un lieu très fréquenté par les touristes. Il y a des points de restauration et l'Auberge Saint Paul où l'on cuisine des produits frais régionaux.

Il faut visiter les remparts dessinés par le marquis de Vauban pour comprendre la vie autrefois à l'intérieur de cette cité.
Village Fortifié

Le choix du lieu géographique est judicieux par le Comte de Cerdagne. Il permet le contrôle de la région de Conflent. Il équipe sa capitale d'un premier système défensif. Au cours des siècles, le système défensif se renforce mais au XIVe siècle l'ensemble du système de fortification est reconstruit.

La France veut repousser les espagnols en Espagne. En conséquence, les armées françaises doivent reconquérir les places fortes situées le long des Pyrénées, dans cet objectif militaire la ville de Villefranche de Conflent est assiégée et elle prise en 1654. Il est décidé de raser le système défensif de ville pour éviter le retour des armées espagnoles.

Le roi Louis XIV décide de renforcer ses positions militaires le long des Pyrénées et de reconquérir les territoires espagnoles en territoire français. Il faut implanter une ligne défensive ce qui implique de renforcer la défense de Villefranche de Conflent.
Le marquis de Vauban, architecte militaire va dessiner les plans du système de fortification du site avec aussi la construction du Fort Libéria sur le flanc de la montagne au-dessus de la cité au Nord. Le chantier commence en 1669. Lors d'une tournée d'inspection dans sa fonction de Commisaire général des fortifications, il viendra en 1679 mesurer l'avancer des travaux.

L'architecte militaire Vauban a conçu la fortification en utilisant une muraille épaisse avec deux niveaux de chemins de ronde couverts. Le niveau inférieur utilise le restant des murs médiévaux et le niveau supérieur est chapeauté d'une toiture en ardoise. On place des bastions aux endroits stratégiques.
Lors de la visite, il faut emprunter le fléchage en bleu pour visiter et revenir en suivant les flèches rouges.

Au début de la visite, le site n'est pas très imposant mais petit à petit les fortifications se dévoilent et on est impressionné par l'étendue de l'enceinte.

On emprunte le chemin de ronde pour découvrir la qualité de l'architecture militaire imposée par la marquis de Vauban.

On aperçoit une échauguette des remparts.

Les défenses permettent d'observer le village et les flancs de la montagne.

On aperçoit le fort Libéria sur la hauteur.

Le chemin de ronde est parfois assez étroit. Il y a des montées et des descentes en fonction des niveaux à emprunter.


Il y a quelques panneaux d'information pour expliquer l'origine de telle ou telle pièce.

Lorsqu'il fait une température caniculaire, le parcours du chemin de ronde permet une certaine fraîcheur.

On aperçoit la Tour du Diable et le Clocher de l'église Saint Jacques dans le prolongement de l'enceinte fortifiée.

On suit toujours nos flèches bleues.

On commence à trouver le chemin de ronde un peu long. A chaque fois, il apparaît un autre parcours au détour d'un passage. On se demande si cela va bientôt se terminer.

L'ensemble du bâti est maintenu en bon état de conservation.

On part à droite ou à gauche ?

Vers les Tours, il y a un peu plus d'explication sur l'utilisation fonctionnelle du lieu par la garnison.





Sur le retour, on suit les flèches rouges pour revenir on point de départ où est situé la sortie.

Au bastion de la Reine, il y a un martinet de forge catalane exposé au regard des visiteurs.

Nous décidons de déjeuner à l'Auberge Saint Paul située sur la place de l'église. Le cadre est propice à une dégustation des produits du terroir. La chef médiatique Patricia Gomez et son mari ont vendu leur affaire et le nouveau propriétaire a conservé le second de cuisine de l'ancienne brigade Mickaël Bergé et il a repris son chef Patrick Botteau de son ancienne brasserie le Café de France pradéen.
Au début, le serveur était un peu guindé, il y avait un problème sur une annonce de l'Office du tourisme que le restaurateur ne voulait pas appliquer. Au final, on a trouvé un arrangement. La présentation du déjeuner était soignée et la cuisine était de qualité.


En début de l'après-midi, nous décidons de visiter le Fort Libéria. Il y a une navette "Land Rover" qui nous monte sur le fort. Cette solution est plus confortable que de grimper sous la chaleur à pied soit par le tunnel soit par le chemin.
Fort Libéria
Le chauffeur de la "Land Rover" conduit de manière rude sur le chemin du fort. La voie est étroite avec des virages en épingles. Il faut s'accrocher à l'arrière du véhicule.
Le trajet est rapide, nous sommes heureux de sortir à l'air libre. On se dirige vers la caisse pour régler le droit d'entrée (Adulte navette 4x4 + visite: 10 €). Le lieu est très bien conservé. Il a été récompensé par plusieurs prix comme le 1er prix National de Restauration du Patrimoine Historique, ...

L'utilité d'un fort au-dessus de la cité fortifiée est un élément important pour sécuriser l'accès à la région de Conflent mais aussi de la Cerdagne vers Céret. Cependant, les premiers chiffrages font apparaître un coût très élevé de construction. En 1679, lorsque le maréchal Vauban vient inspecter les travaux de fortification de Villefranche de Conflent, il fait acter la construction du Fort Libéria pour répondre aux ordres du Roi Soleil.

En 1680, le Ministre de la Guerre M. Louvois vient inspecter le nouveau système défensif de la France par rapport au traité des Pyrénées. Il faut sécuriser la nouvelle frontière entre la France et l'Espagne. Il appuie le projet de construction du Fort et commande le début des travaux qui vont durer environ 6 années avec l'aide des soldats.

Le Ministre de la Guerre de Louis XIV en apportant des modifications surtout au niveau des caves et d'une galerie souterraine. Le château est équipé d'environ 20 pièces d'artillerie.

On retrouve les principes de l'architecte militaire Vauban à travers l'usage des briques dans les remparts.

Le paysage est magnifique, on voit les montagnes et les vallées des Pyrénées.



Sous le règne de Louis XIV une affaire est instruite au niveau de la Cour au sujet d'empoisonnement, de magies noires, et de sacrifices rituels d'enfants. Il apparaît des noms comme la marquise de Brinvilliers, ... et la marquise de Montespan. Le roi ordonne sous des lettres de cachet d'enfermer les personnes en cause dans les forteresses. Ainsi 8 femmes seront enfermées dans cette forteresse.


Toutes les femmes enfermées mourront ici après des longues années de captivité. La dernière mourra après 43 ans, elle demandera à être enterrée dans la fosse commune.


On ressort au soleil et on prête une attention particulière à étudier les éléments de construction du fort.



Vers 1850, il est décidé de construire un escalier en souterrain pour relier le Fort Libéria à la cité de Villefranche de Conflent. Le chantier prendre 3 ans pour creuser la roche et construire les 734 marches nécessaires à l'ouvrage.

En saison estivale, il y a la possibilité de se restaurer sur place. On apprécie aussi de prendre un rafraichissement à l'ombre.

Le train Jaune relie Villefranche de Conflent située à 427 m à Latour de Carol à 1232 m en parcourant une distance d'environ 60 km. La ligne a été construite à partir de 1903. Il a fallu bâtir 650 ouvrages d'art dont 19 tunnels pour relier les deux gares. En été, il y a des wagons découverts pour permettre aux touristes d'admirer les paysages.
Le parcours du Train Jaune traverse le Parc Naturel Régional des Pyrénées Catalanes où l'on admire la vallée de la Têt, le massif du Canigou, ..
Il faut prévoir une journée complète pour profiter du moment présent. Attention les gares ne sont pas à côté des villages, il faut prévoir de la marche à pied. Les wagons panoramiques sont très prisés en été. Attention, les tours opérateurs organisent le circuit du Train Jaune, alors parfois il manque des places pour les familles. Au niveau du coût, il faut compter environ 26 €/personne pour un A/R.

Written by Antonio MENDES DA PAULACe village pittoresque est devenue l'une des stations les plus prisées de la région. Sa situation géographique près de la frontière espagnole et au bord de la Méditerranée explique cet engouement . Ce site était occupé à la préhistoire, les fouilles en cours permettent de mieux cartographier les sites catalans utilisés.
Ce port a été le lieu où le peintre Henri Matisse avec son compagnon André Derain créent le mouvement du Fauvisme en 1905. Aujourd'hui, le Musée d'Art Moderne de Collioure oeuvre à perpétuer ce courant artistique dans la citée.

On est impressionné par la beauté du site. On comprend les artistes qui veulent saisir les instants magiques et restituer le ressenti.

Ce port est très fréquenté ce qui se traduit par un gros problème de stationnement. Il faut arriver avant 9h pour stationner son véhicule à proximité sur les hauteurs. Il existe des parkings avec des navettes pour descendre en ville. A proximité du Château Royal, il y a un parking payant.


On profite de la relative fraicheur matinale pour descendre à pied le long de la route escarpée. Le panorama est magnifique.

A un endroit, on descend un escalier abrupte et on emprunte un chemin piétonnier vers le port le long de la mer. On est en sécurité.

Collioure
Les lumières matinales créées par le soleil éclairent les bâtiments du port qui se dégagent du bleu de la mer et du ciel. Il y a plusieurs tonalités dans ce tableau vivant.

L'eau est limpide. On est étonné de la transparence du milieu marin. On voit ici et là la vie s'organiser autour de ces rochers.

A cette heure matinale, il est environ 9h30 à la fin du mois de juillet, il y a petit de monde sur la plage. La cité se réveille doucement, il y a peu de monde le long du parcours vers l'église Notre Dame des Anges vers la pointe à l'entrée du port.


On longe la muraille du château pour se diriger vers la pointe et la chapelle Saint Vincent.


On remarque les plagistes en train d'installer l'équipement nécessaire aux vacanciers pour se prélasser au soleil. Sur la petite place de la Chapelle Saint Vincent, il y a positionné un cadre pour permettre aux touristes de cadrer l'un des paysages peint par le mouvement du fauvisme.


On emprunte une petite digue pour admirer le paysage vers l'entrée du port. On observe la préparation d'une sortie dans le bassin des mousses du club de voile. Le moniteur est à la manœuvre, la mer est belle.

En revenant, on passe à proximité de la chapelle Saint Vincent.

On se dirige dans les petites ruelles situées à proximité de l'Eglise Notre Dame des Anges. Vers 10h30, les ruelles commencent à s'animer. Les livreurs "jongles" dans le trafic pour effectuer les livraisons. Les touristes commencent à arriver et ils se mêlent aux résidents qui profitent de cet instant de calme pour réaliser leurs courses journalières.


Quelques ruelles sont végétalisées par les habitants. Le tableau vivant est très esthétique.

On remarque ici et là des fresques peintes, des motifs propres à la culture catalane.

Le marquis de Vauban, Commissaire général des fortifications vient à Collioure inspecter le niveau de la fortification du château royal édifié par le Roi Louis XI. Il décide de renforcer la défense de cette région en utilisant ce château pour stationner une garnison. En conséquence, la technique utilisée par Vauban pour renforcer la défense est de supprimer tous les obstacles à proximité du fort. Il faut raser la vieille citée.
Ce projet est très mal accueilli par les habitants qui ne sont devenus français que depuis la signature du Traité des Pyrénées en 1659. Le marquis de Vauban hésite à appliquer sa méthode surtout qu'il existe une église sur le site et que les habitants sont très croyants.En 1671, il est ordonné la destruction de 130 maisons et l'église fortifiée est rasée en 1673.
Cependant, il est accordé aux villageois de bâtir les maisons vers l'emplacement actuel et de transformer l’ancienne tour de guet en église.

L'église Notre Dame des Anges est terminée en 1691. Le style architectural est le gothique méridional avec son clocher installé dans l'ancien phare médiéval.


Château Royal
Le château Royal de Collioure est classé aux monuments historiques. Ce château fort royal médiéval et celui de Vincennes sont les deux derniers témoins du passé de la France. Aujourd'hui, il est lancé un vaste chantier de restauration mais aussi de campagnes de fouille archéologique pour établir la datation et la fréquentation de ce lieu au fil du temps.

On vous recommande de prendre la visite guidée pour connaître l'histoire du château mais aussi pour vivre par l'intermédiaire du guide un excellent moment d'Histoire de la région.
La première construction serait datée vers 672. L'Ordre du Temple construit un château fort vers 1207. En 1345, le Roi d'Aragon récupère les possessions de l'Ordre de Saint Jean de Jérusalem.
La position stratégique du port de Collioure devait être défendue par un château fort. La baie de Collioure permettait aux navires de s'abriter si les conditions météorologiques étaient dangereuses pour la navigation en mer méditerranée.

Cependant, les Rois de Majorque vivent dans ce lieu dans une demeure princière. Le roi Jacques II de Majorque fait construire le palais des Rois de Majorque à Perpignan et donne en douaire à sa femme la résidence et la ville de Collioure.
Les temps agités exigent de renforcer la défense de ce lieu stratégique. Il est décidé de transformer la résidence en château fort seigneurial. Des importants travaux sont entrepris pour construire des murailles.

Les récentes fouilles ont permis d'établir la fréquentation régulière de cette baie depuis l'Antiquité. On voit le chantier en cours de fouille à l'intérieur du château.

A partir du XVe siècle, une garnison permanente est affectée à la défense du site. L'Empereur Charles Quint va commander des travaux de renforcement avec un nouveau dispositif défensif du site avec le fort Saint Elme.


L'emplacement géographique du château fort permet d'avoir une position centrale sur le port et la baie de Collioure. Ainsi, il contrôle le commerce maritime de cette région.

Aujourd'hui, les constructions se sont à nouveau installées près du château fort mais à l'époque du XVIIe siècle, il n'y avait plus de construction pour abriter un ennemi lors d'une attaque menée contre la garnison.
En général, les travaux entrepris par le Maréchal Vauban sont basés sur une surélévation en brique des remparts et de nouveaux éléments défensifs. Le choix de la brique était très judicieux. Il provient d'observations sur le terrain des dégâts produits à l'impact par les boulets sur les soldats en garnison. Il était moins dangereux pour les soldats d'avoir un mur d'enceinte en brique. Les lésions étaient moins profondes. Le deuxième avantage, il est économique, les soldats pouvaient produire les briques standardisées.




On peut admirer les travaux de restauration sur les éléments de la construction comme la charpente.



Les artisans doivent retirer l'enduit qui s'est abimé sous l'effet de l'humidité et du temps. Il y a eu déjà quelques campagnes de restauration pour entretenir le bâti.


Aujourd'hui, il y a le souci de réaliser une restauration de qualité dans l'esprit d'autrefois pour conserver à cet édifice sa qualité architecturale.

Au niveau architectural, lors d'une restauration, l'architecte en charge de l'opération doit réaliser un élément de sa restauration hors norme pour dater l'époque de sa restauration. Par exemple, dans cette pièce, la hauteur sous la fenêtre des bancs n'a pas été respectée.

Le choix des couleurs et des matériaux sont décidés après une recherche historique des éléments à partir d'archives mais aussi de châteaux existants.

On arrive au pont levis, il est constitué en deux parties: une fixe et une amovible.

On aperçoit l'un des rares parkings au pied du château royal.

Au loin, on aperçoit un autre élément défensif du dispositif du site, le Fort Saint Elme.

Vers midi, il est l'heure de déjeuner, il y a de nombreux restaurants le long du port et dans certaines ruelles du centre-ville.

Plages & Port
Les touristes se sont installés sur la plage pour bronzer et profiter des plaisirs simples de la mer.

On remarque les barques catalanes ou sardinales de Collioure qui autrefois étaient utilisées pour la pêche à la sardine et à l'anchois. A la fin du XIXe siècle, le port de Collioure comptait + 120 barques avec 700 marins pour ces pêches. Les conserveries tournaient à plein.

Collioure en Hiver
Notre nouveau reportage a eu lieu en Automne, le vendredi 15 décembre en matinée. La veille, il y avait la tramontane avec des rafales jusqu'à 80 km/h qui glaçait les personnes. En ce début de matinée, le vent est modéré et la température est douce avec 13° pour cette saison.
Après avoir emprunté la voie rapide la D914, on roule en direction de Collioure en prenant la route de Mateloc où l'on aperçoit le vignoble en coteaux.

En direction du centre-ville vers le quai de l'Amirauté, il y a plusieurs places de stationnement libres. On se gare à proximité de la poste. En arrivant au rond-point, on a perçu le magasin d'Anchoix Desclaux. On entreprend quelques achats dans cette spécialité locale. La pêche à l'anchois est pratiquée depuis le Moyen Âge. On début du XXe siècle, la cité comptait encore + 100 barques catalanes à la voile latine afin de pêcher dans les eaux poissonneuses de la mer Méditerranée.


En cette saison, on peut apercevoir des orangers et des citronniers avec leurs fruits. La végétation est du type méditerranéen avec des plantes comme les agaves, .... les oliviers et les palmiers.


Après avoir fait nos premiers achats, on s'oriente vers la rue Arago et les ruelles à la découverte de cette architecture catalane où les maisons sont bâties en hauteur dans des rues étroites. Ce type d'urbanisme permettait de limiter l'impact de la tramontane dans la cité. La rénovation récente de quelques façades dans les coloris de ces terroirs apporte une touche d'authenticité au cœur de la cité.


On apprécie cette visite où l'on peut déambuler dans les rues sans une foule omniprésente. Il y a peu d'autochtones dans les rues malgré l'heure avancée de cette matinée.


Après l'observation du patrimoine architectural, on s'est dirigé vers le Bd du Boramar où il y a l'une des plages de Collioure.

Notre regard se porte sur le peu de personnes. On a le sentiment d'être seul au monde sur le Bd désert et sur la plage, il y a quelques promeneurs qui observent la mer méditerranée.


Après avoir profité du point de vue, on s'est dirigé vers l'église Notre Dame des Anges et la chapelle Saint Vincent. On peut observer d’anciens vestiges de l'activité du port et son canon pour rappeler au public l'importance stratégique de ce port sur cette côte entre les royaumes de France et d'Espagne.


Vers la cote de la rue Bellevue, l'état de la mer est plus agité que dans le port. Le spectacle est fascinant, on attend le ressac qui procure quelques vagues plus importantes avec de l'écume.


Après avoir passé la chapelle Saint Vincent où le vent souffle en rafale, on s'est engagé dans la passerelle vers le phare. Le panorama est magnifique, la luminosité variable apporte au paysage un certain éclairage très intéressant.


Sur le chemin du retour, on peut apercevoir les importants travaux sur le ravalement de la façade de l'église Notre Dame des Anges. L'église est fermée à la visite au cours des travaux. Ce panorama est intéressant, il permet de prendre du champ pour observer l'architecture depuis le Château Royal jusqu'à la côte de Bellevue.

La terrasse du café situé à l'angle de la place de l'église offre un super panorama avec une vue imprenable sur le château Royal et sur la plage. Au printemps, il est très agréable de prendre son café à cette terrasse en observant l'animation sur la plage.

Au niveau culturel, la ville entretient son passé lié au courant artistique du Fauvisme. Son Musée d'Art Moderne cultive à travers des expositions éphémères ici et là ses œuvres. Chaque année, ce lieu culturel attire des artistes du monde entier afin de s'inspirer de ses paysages et de ses éclairages pour produire quelques œuvres remarquables.

La descente du Bd du Boramar le long de la plage et des platanes vers le port de Collioure en face du Château Royal est un réel bonheur. Il y règne un silence très appréciable qui permet de jouir du spectacle.


Cette escapade en terre catalane à Collioure se termine en admirant ses paysages où l'Homme a œuvré au fil des siècles ces terrasses où la vigne est cultivée. Actuellement, le réchauffement climatique touche ce vignoble qui tend à disparaître au fil du temps.


Anse de Paulilles
A quelques kilomètres à Port Vendres, il y a le site classé de l'Anse de Paulilles sur la côte vermeille aux pieds du massif des Arbères à découvrir. Il faut prendre la RD 914 direction Banyuls sur Mer, à la sortie de Port Vendres à environ 3 km. Il y a un rond point avec l'indication du parking. Attention, il est souvent plein !!! Après, il est très difficile de trouver un endroit pour stationner son véhicule.
L'accès au site se fait à pied. Le 1er chemin vous conduit directement à la Maison du site, puis il y a un petit parc avec des chemins pour vous conduire à la plage et à l'espace aménagé et à l'Atelier des Barques.
Attention, il y a bien 2,5 km entre le parking et la plage. On peut emmener son pique-nique et le nécessaire de plage.
L'ancien site de la Dynamiterie du groupe Nobel a été réhabilité par le Conservatoire du Littoral & le Conseil Général des Pyrénées Orientales. C'est une vraie réussite.

Après une petite pause, on descend dans le parc, puis on se dirige vers la plage. L'aménagement de l'espace botanique est intéressant.

Le visiteur peut s'installer soit sur la plage soit devant dans un espace aménagé avec quelques bancs et des arbres pour avoir de l'ombre.


Sur le chemin du retour, il faut se diriger vers l'espace d'exposition et l'Atelier des Barques. Les entrées sont gratuites.

Il est très intéressant de découvrir le patrimoine maritime catalan et en particulier les barques catalanes de Port Vendres.

L'atelier de restauration et de construction des barques catalanes est un lieu calme où il est très intéressant de regarder les artisans œuvraient pour former et fixer les pièces de bois de l'ossature. La gestuelle professionnelle est précise, le technicien maîtrise son art de la charpente marine. On est dans une production artisanale.


Le petit espace de musée rassemble des souvenirs du passé maritime de la région. Les photos et les objets nous renvoient au temps où l'effort physique était nécessaire pour sortir les barques pour aller pêcher la sardine et l’anchois.

Un autre bâtiment sert de lieu d'exposition temporaire. Nous avons apprécié les photographies qui montraient l'évolution du milieu naturel de la région.

Le restaurant des Frères Roca, El Celler de Can Roca, à Gérone en Espagne est l'un des temples de la gastronomie mondiale. L'établissement a reçu 3 étoiles au Guide Rouge de Michelin, il a été nommé meilleur restaurant au monde par le magazine anglais 50 Best Restaurants et 6e dans la liste des 1.000 meilleurs restaurants au monde.
En conséquence, la demande est importante et il faut prévoir une réservation parfois sur liste d'attente sur un délai d'un an. Le système de la réservation fonctionne correctement, il est conseillé de maîtriser l'espagnol pour comprendre la procédure à suivre.
On reçoit un message de confirmation de la réservation quelques mois avant la date fixée pour bloquer définitivement la table.

Le Chef Joan ROCA s'est impliqué à maîtriser la cuisine traditionnelle catalane mais en lui insufflent la modernité à travers les techniques de la cuisine moléculaire, la cuisson sous vide et la cuisson à basse température.... Son frère Jordi ROCA s'est spécialisé dans la pâtisserie et son frère Josep ROCA dans la sommellerie.

Nous avions réservé notre table pour le vendredi 22 juillet 2016 à 13h. Le temps incertain sur Gérone nous a conduit à nous présenter sous un orage vers 12h, le personnel est venu nous chercher sur le parking avec un parapluie.

On nous installe rapidement à notre table et on nous présente la carte du menu, il y a deux possibilités, le 1er menu à 155 €, il est déjà complet au niveau de la proposition gustative, le 2e menu "Festival" à 195 € est impressionnant par la liste des émotions culinaires proposées.
On opte pour le menu "Festival" et on prend l'accompagnement des vins "Maridatges" avec l'apéritif maison à 90 €/personne.

Le choix de ce restaurant est guidé par l'envie de visualiser l'Art culinaire dans un restaurant gastronomique. Comment chaque proposition culinaire associe l'esthétique et le goût ?
Le personnel de service est prévenant et il n'est pas "guindé". On nous apporte notre apéritif avec une suite de petites préparations servies après que chaque convive est terminé sa dégustation.
A chaque fois, on nous explique la composition de la préparation à déguster.
Au niveau du visuel, les différentes présentations sont esthétiques et parfois surprenantes comme nous apporter un petit olivier sur la table pour que chaque convive prenne 2 olives. Il y a une vraie recherche sur une thématique et sur le visuel à utiliser pour faire voyager le dégustateur.
Le menu du chef pour propose de nous faire voyager à travers la cuisine du monde: la Thaïlande, le Japon, la Chine, le Pérou, la Corée
Au niveau du goût, la recherche gustative est moins flagrante. Il y a un vrai effort de la part du chef mais elle n'est pas souvent partagé par le convive. Par exemple, l'olive, elle était parfaitement représentée avec une enveloppe et à l'intérieur de l'huile d'olive. Après la dégustation de la 1ère, les personnes n'ont pas voulu manger la deuxième.

Sur le présentoir, on nous explique le parcours gustatif à réaliser. C'était intéressant mais sans plus. Ce qui a marqué les convives, c'était le travail minutieux en cuisine pour obtenir la réalisation de chaque élément de la composition.



A un moment, les convives se sont posés la question de savoir si on avait commencé le menu des entrées ou on était toujours à l'apéritif.
Attention, chaque photo "grossit" le met, en réalité c'est plutôt une bouchée au niveau de la quantité à déguster.
Maintenant à chaque préparation culinaire, on nous apporte un verre de vin. On nous explique le contenu de la préparation avec les différents ingrédients avec sa méthode de cuisson et une sommelière nous présente le vin à déguster.

Chaque met est servi avec une "assiette" originale. On sent le désir d'associer le visuel à la sensation gustative recherchée. On est étonné à chaque présentation de constater une composition artistique par une suite de petits détails. Il y a un travail d'orfèvre remarquable.

Au niveau du pain, on nous propose un assortiment d'une quinzaine de composition. On est agréablement surpris par certaines associations.

Par exemple, voici la salade verte. Elle comprend de l'avocat, du citron vert, du concombre, de la chartreuse, de l'oseille, du shiso vert, de l'estragon, de la roquette, de l'oxalis, un sorbet d'olive et de l'huile d'olive.

On nous sert une anguille fumée avec des cerises marinées sur un lit de noix de cajou et un beurre noisette. Ce met n'a pas soulevé l'enthousiasme des convives.

Le plat d'huîtres a été le met le plus surprenant du déjeuner. Nous sommes des Amateurs d'huîtres, et on est un peu désarmé devant cette déclinaison de l'huître. Les cinq huîtres sont cuisinées d'une manière différente. De l'avis général, il y a une recherche trop complexe sur l'huître. Il y a quelques pistes gustatives intéressantes mais le plaisir de retrouver la texture et le goût de l'huître n'étaient pas au rendez-vous.
Par contre, au niveau esthétique, le visuel est magnifique mais éloigné de l'évocation de l'océan par ce vert.

La langoustine à la sauce de fèves de cacao avec un mole noir au chocolat et une crème de crevette avec du coco et du cèpes. L'idée du présentoir est excellente.


On demande de nous retirer certains verres car il n'y a plus de place. Le plat de petits calmars avec une association de tempeh d'haricot blanc n'est pas un grand moment de gastronomie.


Le plat de la Gamba marinée au vinaigre de riz dans son jus de tête de gamba, les pattes de la gamba croustillantes dans un velouté d'algues et de phytoplancton n'a pas enthousiasmé les convives.

Le plat de la Raie rouge confite avec son jus de poivron grillé avec la rhubarbe était un excellent moment de la dégustation. L'accompagnement proposé était judicieux au palais.

Le dernier plat de poisson "la Dorade rose avec samfaina" était une belle composition artistique mais en bouche, le plaisir n'était pas au rendez-vous.

L'impression générale à ce moment du déjeuner est que la partie crustacé - poisson est très importante. De plus, une grande partie des plats proposés étaient basés sur le cru ce qui a fini par incommoder les convives.
Lorsque le 1er plat de viande est servi, il y a un soulagement réel à table.
Le Cochon de lait ibérique avec sa salade de papaye verte, du pamplemousse thai, de la pomme, du chili, du citron vert, de la noix de cajou avec une purée de tamarin et de shisho. Le plat est une grande réussite, la viande est très tendre, elle fond en bouche avec son goût particulier. La sauce proposée est intéressante à découvrir. Par contre, la portion est avalée en une bouchée !!!

L'Agneau avec sa purée d'aubergine et de pois chiche accompagnés avec deux tomates épicées nous a plu. La viande est cuite à la perfection mais l'esthétique n'est pas à la hauteur des attentes à ce niveau d'exigence artistique.


Déjà on nous sert le dernier plat de viande. Un dessus de palette de veau écarlate avec un accompagnement de fruits rouges confits, de poivron grillé, de merken, de shiso rouge, de pastèque à la braise et une béarnaise de betterave. Ce plat a été le moins apprécié de la suite de la viande. Au niveau esthétique, on n'est pas transporté, on est sur des tons rouges, ...


On est étonné lorsque le 1er dessert nous est servi à table. On comprend que la partie "Viande" est terminée.
Au niveau visuel, l'ensemble n'est pas très esthétique. Au niveau gustatif, il y a un arôme qui vous remplit le palais avec la fraîcheur de la glace.


Le 1er vrai dessert nous propose un visuel travaillé. Il y a une recherche sur les couleurs, sur les formes géométriques, sur la dimension des éléments de la composition avec une recherche de légèreté par l'élévation de la structure. Au niveau gustatif, on passe du chaud au froid pour obtenir une certaine complexité en bouche.

La sphère n'est pas très grande en réalité mais elle surprend par sa texture, sa transparence qui laisse apparaître des couleurs. Naturellement, on casse la sphère comme un œuf pour découvrir de contenu de l'intérieur.

On est surpris par l'abondance d'éléments à déguster. Au niveau gustatif, on ne ressent pas une émotion particulière en bouche.

Le dernier dessert est "la Boîte de cigares". Elle est composée de chocolat au lait, de prunes sèches, de feuille de tabac et de feuille de cacao. La présentation esthétique est discutable et au niveau gustatif, ce n'est pas un grand moment de gourmet. On sent présent l'amertume du tabac et du chocolat.

Au niveau des vins, on doit reconnaître que les choix sont judicieux. L'ensemble présenté est composé de 15 vins, on peut citer Do Ferreiro cepas Vella 10 D.O Rias Baixas, le château des Rontets les Birbettes en Pouilly Fuissé, Equipo Navazos Florpower Mas aca en vin blanc et le remarquable Madère d'Henriques & Henriques Malvasia 20 ans.

On nous propose de prendre le café en terrasse, mais il a pleut, en conséquence, on préfère rester à notre table.
Notre déjeuner se termine vers 16h30. Le soleil est revenu. En partant on aperçoit le chef de la cuisine qui parle avec sa brigade de service.

In the village of Sounds in Isere, there is the Garden of the petrifying Fountains carried out on an old discharge in edge of Isere. In 1997, the notation of the “Greedy Feeding-bottle” makes its appearance to indicate an establishment where kitchen of quality at a moderate price.

In the years 1970, Henri Gault and Christian Millau will launch a magazine of gastronomy and a guide “GaultMillau”. The guide establishes a notation of the restaurants according to new criteria which announce a revival of the French cuisine.
The movement of the new kitchen takes as a starting point these new criteria like a return to authentic flavours of the products, to control the cooking of the meats, fishes and vegetables, to control the sauce funds,…. the excellence of the kitchen and the culinary creativity must show the real know-how of a chief and a brigade of kitchen. The taste becomes again a basic element to make share with the customers of the restaurants. One also recommends to decrease the number of the mets been used compared to the services as Auguste Escoffier.

Here the list of the 10 recommendations for this new kitchen written by Henri Gault and Christian Millau in 1973:

2 “You will use fresh produce and of quality.”
3 “You will reduce your map.”
4 “You will not be systematically modernistic.”
5 “You will however search what the novel methods bring to you.”
6 “You will avoid marinades, faisandages, fermentations, etc”
7 “You will eliminate rich sauces.”
8 “You will not be unaware of dietetics.”
9 “You will not fake your presentations.”
10 “You will be inventive.”
Since 1980, the editorial board of the Guide decrees the title of “Cook of the year”.
The emblematic chiefs of this current are Michel Guérard, the Large Brothers Three, Alain Chapel, Paul Bocuse, Alain Sanderens.
The culinary movement of the defense of the taste is an answer sociétale to the development of an industrial kitchen developed by the great groups of the agro-alimentary one. In the years 1990, researchers wanted to check in a scientific way the bases of the receipts of the French cuisine. Nicholas Kurti and Hervé This created the molecular gastronomy. ART OF COOKING

The Palace of Beautiful arts of Paris organized the exposure “Art and the culinary process” in 2013. The idea of this exposure was to develop a contemporary approach of the art of cooking.

Culinary creation is about to being recognized like an art except for whole, a mode of expression anchored in the contemporary. In 2007 already, Ferran Adrià saw himself invited as an artist in Dokumenta de Kassel. But its participation was limited to the invitation of some visitors of the exposure in his restaurant elBulli to Pinks… How can the kitchen ‐elle fully become an object of exposure?
The “new one cooks” in the years 1970, then twenty years later before ‐ Spanish or Italian gardism, registered the evolution under the sign of a permanent duty of creation. More recently, the return to the order and the centring on the product were during “natural” esthetics which, in phase with the blossoming of the Scandinavian kitchen, gave its noble letters to the locavorism, including in its most radical expressions. Which are the aesthetic trends and the dominant forms in the contemporary kitchen? Is the epic of the natural kitchen ‐il soluble in the theoretical work of the more conceptual cooks?
In the central exposure of program COOKBOOK, the contemporary art forms a “gangue” around the culinary creation, represented by preparatory works (drawings, sketch, joinings, videos…) carried out by the Masters of the world gastronomy.
In return, COOKBOOK isolates some components from the culinary practice (cooking, the table, the alchemical transformation of the matter, the contribution of the “molecular kitchen” and the reflection on the structures and the matters of the ingredients…) in order to locate of them the action or the correspondences in the artistic process.”
In the years 1960, the School of Beautiful arts of Frankfurt exempts courses of kitchen. Today, one teaches at the University of Art and Design (ESAD) the culinary design. The conducting line of this educational movement is to train the future chiefs with Art to make it possible to these chefs to try out and create transitory works of the contemporary gastronomy.

In this respect, the OMT invites the governments to include the administrations of tourism in their devices of planning, their structures and their procedures of security at the national level, to not only make in kind reduce to a minimum the exposure of the sector to the threats, but also maximize the contribution which it can make to the security and the facilitation”.
